Rhubarb Meringue Pie
From Farmer’s Market Cookbook by Ysanne Spevack
A fun springtime dessert… from scratch!
1 ¾ cup all-purpose flour, plus extra for flouring
¼ cup ground walnuts
½ cup chilled butter or margarine, diced
A generous 2 ½ cup unrefined caster sugar or rapadura
4 egg yolks
1½ lb rhubarb, cut into small pieces
Grated rind and juice of 3 oranges
5 tbsp corn starch
3 egg whites
Whipped cream to serve
Sift the flour into a bowl and add the group walnuts. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in 2 tbsp of the sugar with 1 egg yolk beaten with 1 tbsp of water. Mix to a firm dough. Turn out onto a floured surface and knead. Wrap in plastic and chill for 30 minutes.
Preheat oven to 375 degrees F. Roll out the pastry on a floured surface and use to line a 9 inch fluted flat tin (quiche pan). Prick the base with a fork. Line with foil and fill with baking beans. Bake for 15 minutes.
Put the rhubarb 6 tbsp of the sugar and orange rind in a pan. Cover and cook gently until rhubarb is tender.
Remove the foil and beans from the pastry case, then brush with a little of the remaining egg yolk. Bake for 10-15 minutes until the pastry is crisp.
Blend together the cornstarch and the orange juice in a small bowl. Remove the rhubarb from the heat and stir in the cornstarch mixture then bring back to a boil, stirring constantly until thickened. Cook for an additional 1-2 minutes. Allow the mixture to cool slightly, then beat in the remaining egg yolks. Pour into the cooked pastry case, spreading evenly.
Whisk the egg whites in a large mixing bowl until the form soft peaks, then gradually which in the remaining sugar 1 tbsp at a time, whisking well after each addition.
Spoon the meringue over the filling to cover completely. Bake for 25 minutes until golden. Serve warm or leave to cool for 30 minutes and serve with whipped cream.
